chicken betutu is a typical Balinese food that comes from Gianyar but now spread throughout the area in Bali. The pioneer of betutu chicken was Ni Wayan Tempeh who came from Abiansi area, Gianyar city in 1976.
Although the name of chicken betutu, but the raw materials used can be chicken or duck and wrapped using banana leaves along with banana bark so more fragrant aroma of chicken. How to cook it was quite unique where the chicken will be given spices that are put into the stomach then just burned using fire husk.
Before being burned using chaff, the chicken packs will be planted in and into the hole in the soil and covered with the coals. It takes hours to get the taste of the chicken is tender, savory, the smell of burnt husk scent and also the unique taste because it only uses chokes fire
